Ownership engaged Greenbriar in March of 2023 in structuring and leading all aspects of the business, from operations to executive management. After a successful year-long engagement, Greenbriar acquired the Roost brand and its operating entities with plans to significantly expand the brand throughout Texas and beyond.

Greenbriar partnered with the owner of two existing fast-casual seafood restaurants based in East Texas to explore reidentifying them under a new brand. Primary work has included: brand positioning, brand architecture, creative activation, trademarks, as well as menu recreation and consumer communication. After successfully trademarking all intellectual property and standardizing its operations and business model, Greenbriar is planning to convert the two existing units to the new brand and further develop The Coast Southern Seafood brand throughout Texas.

Greenbriar owned, operated and successfully exited a collection of Rusty Taco restaurants in the DFW market.
